Blue Bonnet Cafe Shares their Pie Recipe!

We can hardly believe how fortunate we are! Our friends at the Blue Bonnet Cafe shared the recipe for their Banana Cream Pie with us, just in time for the holidays! Ours turned out, well, like the BEST Banana Cream pie we’ve ever eaten! No contest! Thank you SO MUCH for allowing us to share some of the magic BBC brings to Marble Falls, the Hill Country, and all of Texas! Can’t wait to eat more of their signature pies found right here in Marble Falls!
 
Blue Bonnet Cafe’s Banana Cream Pie Recipe

  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/3 teaspoon salt
  • 3 cups milk
  • 4 eggs, separated
  • 3 tablespoons butter
  • 1-1/2 teaspoons vanilla
  • 2 bananas, peeled and sliced
  • Your favorite 9-inch  pie crust, cooked
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla

Separate the egg yolks from the whites; reserving whites for another use. Slightly beat the egg yolks. Combine sugar, cornstarch, salt, and milk. Cook sugar mixture in a saucepan over medium to low heat, stirring constantly. After the mixture bubbles up and thickens, cook an additional 2 minutes. Remove from heat. Gradually add 1 cup of the hot sugar mixture into the beaten egg yolks, stirring constantly. Return the egg mixture to the saucepan; slowly bring to a gentle boil. Cook and stir for 2 minutes.  Remove from heat.  Add butter and 1-1/2 teaspoons vanilla; stir until butter is melted. Line a 9-inch cooked pie crust with sliced bananas. Pour pie filling over sliced bananas. Let the filling cool or refrigerate before adding the whipped cream topping.
 
Beat the heavy whipping cream at high speed with an electric mixer. As it starts to thicken, add powdered sugar gradually. Add 1 teaspoon of vanilla. Beat until soft peaks form, being careful to over beat the cream.
 
Top the pie filling with whipped cream.
